Thanks to its easy access and proximity to the capital (236 km), it is <strong>a much-loved tourist destination<\/strong>. In the Paracas National Reserve, where the <a href=\"https:\/\/freewalkingtourslima.org\/en\/lima-journey-by-sea-and-through-the-coastal-desert\/\">desert embraces the waters of the Pacific<\/a>, travellers stroll along stark, vegetation-free shores and head out by boat towards the <a href=\"https:\/\/consultasenlinea.mincetur.gob.pe\/fichaInventario\/index.aspx?cod_Ficha=1305\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Ballestas Islands<\/a>, <strong>drawing close to extraordinary marine wildlife<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Etymologically, <strong>Pisco comes from the Quechua word Pisku<\/strong>, meaning \u201cbird\u201d in Spanish. Perhaps the name was inspired by the guanay cormorants, Peruvian boobies, tendrils of seabirds, Humboldt penguins, gulls and countless other winged creatures that bring the reserve to life. It\u2019s just a glimpse of Peru\u2019s remarkable avian diversity \u2014 1,879 species have been identified across the country \u2014 making it a genuine paradise for birdwatchers.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Festively speaking, Pisco is also the name of Peru\u2019s national spirit. Of colonial origin, its high alcohol content turns it into a true \u201c<strong>mischief-maker and sorrow-chaser<\/strong>\u201d, as the beloved <a href=\"https:\/\/www.cervantesvirtual.com\/portales\/ricardo_palma\/apunte_biobibliografico\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">writer Ricardo Palma<\/a> once described it in his <em><a href=\"https:\/\/bicentenario.gob.pe\/ricardo-palma-tradiciones-peruanas-independencia\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Tradiciones Peruanas<\/a><\/em>. Easing worries and <strong>unleashing joy <\/strong>are among the virtues of this elegant grape distillate \u2014 an essential presence at the <strong>legendary <em>jaranas criollas<\/em><\/strong>, where music, laughter and celebration flow as freely as the drink itself.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"864\" height=\"576\" src=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5202.webp\" alt=\"\" class=\"wp-image-3383\" srcset=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5202.webp 864w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5202-300x200.webp 300w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5202-768x512.webp 768w\" sizes=\"auto, (max-width: 864px) 100vw, 864px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Rooted in the coastal tradition and the old alleyways of Lima, <a href=\"https:\/\/pepe-ladd.blogspot.com\/2017\/05\/la-jarana-limena.html\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">the jaranas<\/a> criollas were legendary gatherings where <strong>people ate, drank, sang and danced to the rhythm of guitar<\/strong> and <em>caj\u00f3n<\/em> as if there were no tomorrow. Urban lore has it that when the last guest finally arrived, the <strong>host would hide the key<\/strong> \u2014 just to make sure no one even thought of leaving those <strong>festive marathons<\/strong> that could stretch on for days.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A week or even longer. From the <strong>eve of the birthday celebration to the <em>octava<\/em><\/strong>, passing through stages whimsically known as the \u201c<em>joroba<\/em>\u201d, the \u201c<em>corcova<\/em>\u201d, the \u201c<em>recorcova<\/em>\u201d, the \u201c<em>respinguete<\/em>\u201d and the \u201c<em>andavete<\/em>\u201d. <strong>These were true <em>rompe y raja parties<\/em><\/strong> \u2014 full-throttle celebrations where marineras and waltzes were danced to the point of exhaustion, and glasses were constantly <strong>raised in honour of pisco<\/strong>, the spirit that for centuries has been <strong>synonymous with Peruvian identity.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Pisco \u2014 with a P for Peru<\/strong><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"864\" height=\"576\" src=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5124.webp\" alt=\"\" class=\"wp-image-3385\" srcset=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5124.webp 864w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5124-300x200.webp 300w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5124-768x512.webp 768w\" sizes=\"auto, (max-width: 864px) 100vw, 864px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>We Peruvians rarely agree on everything<\/strong>. There are countless issues that divide us, and only a few that unite us as one. For instance, <strong>when the national football team wins<\/strong>, we all instinctively burst into the patriotic anthem <a href=\"https:\/\/100.cientifica.edu.pe\/2022\/07\/contigo-peru-conoce-la-historia-detras-de-la-iconica-cancion-considerada-el-segundo-himno-nacional\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\"><em>Contigo Per\u00fa<\/em><\/a>. The trouble is that our victories are \u201cfew, but they are victories\u201d \u2014 echoing the spirit of Los <a href=\"https:\/\/www.cervantesvirtual.com\/obra-visor\/los-heraldos-negros-989444\/html\/eae63b2d-6488-4127-86d9-2afe24d245a4_2.html\" target=\"_blank\" rel=\"noreferrer noopener nofollow\"><em>Heraldos Negros<\/em><\/a> by <a href=\"https:\/\/www.biografiasyvidas.com\/biografia\/v\/vallejo.htm\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">C\u00e9sar Vallejo<\/a>, the most universal of our national poets.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>The same happens with gastronomy<\/strong>. We are utterly convinced that our cuisine is among the finest on the planet. So we bristle <strong>if anyone dares to question the flavour of ceviche<\/strong>, <em>papa a la huanca\u00edna<\/em>, <em><a href=\"https:\/\/www.lasrecetasdemj.com\/2014\/01\/videoreceta-aji-de-gallina-by-gaston.html\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">aj\u00ed de gallina<\/a><\/em>, <em>seco de cabrito<\/em> or <em>lomo saltado<\/em>. Even fellow Peruvians who commit such heresy are met with stern disapproval.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And it is certainly not wise to claim \u2014 <strong>or even hint \u2014 that pisco is Chilean<\/strong>. Ninety-nine point nine per cent of those born on this land<strong> are absolutely certain of the Peruvian identity<\/strong> of this aromatic sorrow-chaser; the remaining 0.1 per cent simply prefer not to dignify such nonsense with a response. <a href=\"https:\/\/www2.congreso.gob.pe\/sicr\/tradocestproc\/clproley2001.nsf\/pley\/849C99C18007E3DC05256D2700839B2A\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">That stance is neither whim nor exaggerated patriotism<\/a>. Quite the opposite: the historical documents are firmly on our side.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"864\" height=\"576\" src=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5105.webp\" alt=\"\" class=\"wp-image-3387\" srcset=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5105.webp 864w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5105-300x200.webp 300w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5105-768x512.webp 768w\" sizes=\"auto, (max-width: 864px) 100vw, 864px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Beyond the playful exaggerations of this text, the truth is that our <strong>southern neighbours continue to dispute the origin of Pisco<\/strong>. The Chileans \u2014 who once took Arica and Tarapac\u00e1 from us during the War of the Pacific \u2014 now <strong>lay claim to our emblematic grape spirit<\/strong>. That, for many Peruvians, is a step too far. So whenever the debate resurfaces, <strong>Peruvian scholars dust off viceregal documents that firmly challenge those assertions<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In 2025, it was announced that at the <em>Archivo General de la Naci\u00f3n (AGN)<\/em>, a group of researchers had uncovered <strong>three highly significant colonial documents<\/strong>. One of them reveals that <strong>438 years ago<\/strong>, in the former Villa de Valverde (in Ica), <strong>there was already production and commercialisation of what was then referred to as <em>aguardiente de uva<\/em><\/strong> \u2014 the forerunner of what we now proudly call pisco,\u201d stated Ricardo Moreau, former head of the AGN.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>A toast steeped in history<\/strong><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"864\" height=\"576\" src=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC6570.webp\" alt=\"\" class=\"wp-image-3389\" srcset=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC6570.webp 864w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC6570-300x200.webp 300w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC6570-768x512.webp 768w\" sizes=\"auto, (max-width: 864px) 100vw, 864px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Among the discoveries, one stands out in particular: a \u201cPublic deed of payment and settlement between Manuel de Azante and Jorge Capelo (1587)\u201d. Speaking to <a href=\"https:\/\/www.elperuano.pe\/noticia\/275577-comprobado-con-historia-la-peruanidad-del-pisco-es-indiscutible\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">the official newspaper El Peruano<\/a>, Ricardo Moreau explained that this is the \u201c<strong>oldest document in which the words <em>aguardiente<\/em> and <em>caldera<\/em><\/strong> appear, proving that this drink was already being produced at the time; it also refers to the earliest company formed to make aguardiente\u2026 which would later be known as pisco\u201d.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So, here\u2019s to that. <strong>A toast with Peruvian pisco <\/strong>\u2014 always Peruvian, unmistakably Peruvian. A toast with our national spirit, which according to the Peruvian Technical Standard may <strong>only be produced in coastal wineries<\/strong> in the regions of <a href=\"https:\/\/freewalkingtourslima.org\/en\/lima-your-destination-in-2026\/\">Lima<\/a>, Ica, Moquegua, <a href=\"https:\/\/freewalkingtourcusco.org\/en\/arequipa-route-of-the-sillar\/\">Arequipa<\/a> and Tacna. Cheers, my friend \u2014 but always in moderation. Our pisco \u2014 even if it claims not to leave a hangover \u2014 is serious business, with an alcohol content ranging from <strong>38% to 48%.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is a powerful spirit that \u201c<strong>is gaining increasing popularity<\/strong> in cocktail bars and restaurants around the world. <strong>A characterful aguardiente made from grape juice<\/strong>, whose <a href=\"https:\/\/buenazo.pe\/notas\/2020\/09\/16\/proceso-elaboracion-pisco-157\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">production process<\/a> f<strong>orms part of Peru\u2019s history<\/strong>.\u201d And that\u2019s not just me speaking in a patriotic haze \u2014 those words appear in the article <a href=\"https:\/\/www.nationalgeographic.com\/travel\/article\/lima-peru\" target=\"_blank\" rel=\"noreferrer noopener\">Why Pisco is (Almost) Exclusive to Peru<\/a>, published by National Geographic.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"866\" height=\"576\" src=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0245.webp\" alt=\"\" class=\"wp-image-3391\" srcset=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0245.webp 866w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0245-300x200.webp 300w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0245-768x511.webp 768w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0245-550x365.webp 550w\" sizes=\"auto, (max-width: 866px) 100vw, 866px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">The article points out that the valley of Pisco gave its name \u201c<strong>to the first distilled spirit created on the American continent<\/strong>\u201d. It also states that \u201cthe first vineyards were planted during the conquest in Ica\u2026 around 1550\u201d. <strong>Now you can see why we feel so proud<\/strong> \u2014 and why we are firmly convinced of the Peruvian identity of <strong><em>piscos puros,<\/em> <em>acholados<\/em> and <em>mosto verde<\/em><\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">These are the three types of pisco established by the official standard. The first is produced from a single one of the eight <a href=\"https:\/\/www.catadelvino.com\/blog-cata-vino\/el-vino-pisco-peruano-cuales-son-\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">authorised pisco grape varieties<\/a>; the second blends two or three; and the third is the result of \u201c<strong>distilling fresh must whose fermentation<\/strong> has been deliberately interrupted\u201d, as explained in the National Geographic article. Another important detail: producing just one bottle<strong> requires between six and eight kilos of grapes<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Pisco celebrations<\/strong><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"864\" height=\"576\" src=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5198.webp\" alt=\"\" class=\"wp-image-3393\" srcset=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5198.webp 864w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5198-300x200.webp 300w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC5198-768x512.webp 768w\" sizes=\"auto, (max-width: 864px) 100vw, 864px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">On your trip to Peru, you simply have to <strong>enjoy one \u2014 or perhaps several<\/strong> \u2014 little pisquitos. If you visit in January, your stay will coincide with <strong>Chilcano Week<\/strong>, celebrating the <a href=\"https:\/\/buenazo.pe\/recetas\/cocteles-y-bebidas\/chilcano-pisco-ingredientes-paso-paso-134\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">refreshing cocktail<\/a> made with pisco, ginger ale, lime and plenty of ice. If you arrive on the first Saturday of February, you can join the festivities for National Pisco Sour Day. And if you\u2019re with us on the fourth Sunday of July, you\u2019ll experience<strong> National Pisco Day<\/strong> in full swing.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You see? There\u2019s always a reason to raise a glass. <strong>If you decide to drink it neat<\/strong>, be moderate \u2014 and sip it in one smooth motion. <strong>You\u2019ll notice the pure aroma and flavour of the grape<\/strong>, followed by a deeply warming sensation. And if you opt for a pisco sour, don\u2019t be fooled by the cocktail\u2019s citrusy sweetness. <strong>Peru\u2019s most famous drink is made with pisco<\/strong>, lime juice, sugar syrup, egg white, ice and a few drops of Angostura bitters \u2014 and it certainly has character.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/larepublica.pe\/datos-lr\/respuestas\/2022\/06\/27\/pisco-sour-por-que-se-llama-pisco-sour-catedral-y-que-representa-la-bebida-insignia-del-hotel-bolivar-peru-evat\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">To toast with a <em>catedral<\/em><\/a> (a double pisco sour) at the <strong>bar of the Gran Hotel Bol\u00edva<\/strong>r on the historic Plaza San Mart\u00edn; to sample the more \u201cclimb-worthy\u201d version at the <a href=\"https:\/\/elcomercio.pe\/provecho\/restaurantes\/dia-del-pisco-sour-por-que-el-bar-ingles-es-uno-de-los-sitios-mas-emblematicos-de-lima-noticia\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Bar Ingl\u00e9s of the Country Club<\/a> Lima Hotel (which contains an extra splash of pisco); to become part of the living history of <strong>the old Antigua Taberna Queirolo<\/strong> or the <strong>bar at the Hotel Maury in <a href=\"https:\/\/freewalkingtourslima.org\/es\/\">the historic center<\/a><\/strong>, where according to some accounts the cocktail was first created in 1920 \u2014 <strong>these are truly extraordinary experiences<\/strong>.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"866\" height=\"576\" src=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0248.webp\" alt=\"\" class=\"wp-image-3399\" srcset=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0248.webp 866w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0248-300x200.webp 300w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0248-768x511.webp 768w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/01\/DSC_0248-550x365.webp 550w\" sizes=\"auto, (max-width: 866px) 100vw, 866px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Another version claims that the <strong>pisco sour was born in the now-vanished Morris Bar<\/strong> of old Lima. In a chronicle published in the newspaper <a href=\"https:\/\/elcomercio.pe\/provecho\/tendencias\/donde-y-como-se-origina-la-receta-original-del-pisco-sour-dia-del-pisco-sour-bartenders-del-hotel-maury-tdex-noticia\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">El Comercio<\/a>, it is noted that the owner, <strong>V\u00edctor Morris, introduced in 1916<\/strong> \u201ca pisco sour prepared under <strong>the famous \u20184-1-1\u2019 formul<\/strong>a \u2014 that is, 4 ounces of pisco, one of lime juice and one of gomme syrup. The original recipe includes the white of one egg and ice.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>A very popular custom is the <em>res<\/em><\/strong>. If you\u2019re out with friends, go ahead and order one \u2014 <strong>your table will soon be set with a bottle of pisco<\/strong>, another of ginger ale, plenty of lime slices and lots of ice, so <strong>you can mix your own chilcanos exactly to your taste<\/strong>. What do you think? A different \u2014 and delightfully sociable \u2014 way to celebrate our national spirit, as Peruvian as <a href=\"https:\/\/freewalkingtourcusco.org\/en\/machu-picchu-visit-the-inca-llaqta-in-record-time\/\">Machu Picchu<\/a>.
