The old saying that \u201cthere\u2019s no accounting for taste\u201d doesn\u2019t quite apply here. My aim is different: <strong>I want to take you \u201csailing\u201d through Lima\u2019s seafood cuisine<\/strong>, one of its greatest strengths thanks to its privileged coastal setting. That is the secret \u2014 <strong>the very essence \u2014 of the flavour behind Lima\u2019s much-loved seafood cuisine<\/strong>, enjoyed with enthusiasm in every district of Lima, a city where <strong>fish and shellfish<\/strong> are truly revered.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If during your holiday in the \u201cThree Times Crowned City\u201d<strong> you urgently need to revive your body<\/strong> and restore your energy \u2014 perhaps after a long walk or a <strong>lively bohemian night<\/strong> out in <a href=\"https:\/\/freewalkingtourslima.org\/en\/things-to-do-lima\/free-walking-tour-barranco\/\">Barranco<\/a> \u2014 I recommend two powerful, hearty and steaming levantamuertos (literally, \u201c<a href=\"https:\/\/www.infobae.com\/peru\/2025\/01\/06\/la-sopa-levantamuertos-de-la-decada-del-50-que-se-popularizo-en-un-mercado-centrico-de-lima\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">raise-the-dead<\/a>\u201d soups). They are so restorative that from the very first spoonful <strong>you\u2019ll feel as though even your soul has been strengthened<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chilcano is a simple yet deeply nourishing broth<\/strong>. In some <em>cevicher\u00edas<\/em> \u2014 the generic name for seafood restaurants \u2014 <strong>it is served as a courtesy<\/strong>, a little \u201ctreat\u201d from the chef. A similarly reviving effect comes from another soup once prepared by fishermen in the <a href=\"https:\/\/freewalkingtourslima.org\/en\/from-lima-to-callao-crossing-the-chalaco-sea\/\">port of Callao<\/a>, to <strong>sustain them through their long and demanding days at sea<\/strong>. They would light their fires using the wooden frames of parihuelas \u2014 the platforms on which they carried what they had \u201charvested\u201d in their nets.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The name lives on in the broth that is now <strong>one of the shining stars of seafood menus<\/strong>: the <a href=\"https:\/\/www.lavanguardia.com\/comer\/recetas\/20170612\/423282760782\/cocina-peruana-el-levanta-muertos-del-chef-gaston-acuario.html\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">mighty <em>parihuela<\/em><\/a>. This generous soup <strong>brings together a representative sample of the ocean\u2019s biodiversity<\/strong> \u2014 fish, crab, mussels, scallops, sea snails, prawns, squid and octopus, among other treasures. Peru\u2019s national dish \u2014 with its very own National Ceviche Day, celebrated every 28 June since 2004 \u2014 has <strong>roots that stretch back to pre-Hispanic times<\/strong>. It is believed that the northern <a href=\"https:\/\/historiaperuana.pe\/periodo-autoctono\/cultura-mochica\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Moche<\/a> were the first to <strong>marinate pieces of fish in the juice of tumbo<\/strong>, a fruit whose flavour is similar to passion fruit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">During the Inca period, chicha de jora was used, but <strong>the \u201cromance\u201d \u2014 that magical pairing of lime and fish<\/strong> \u2014 only blossomed with the arrival of the Spanish. <strong>Classic ceviche is beautifully simple<\/strong>. Alongside fresh fish and lime juice, it includes salt, pepper, aj\u00ed limo and sliced red onion. Sweet potato, toasted cancha, corn and crispy chifle are <strong>the loyal and delicious companions of this culinary jewel<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Thanks to the creativity of Peru\u2019s cooks, the national dish has evolved into many tempting variations. You can choose the <strong>traditional ceviche<\/strong>; the mixto (with fish and assorted seafood); the carretillero (served with crispy fried <a href=\"https:\/\/es.wikipedia.org\/wiki\/Dosidicus_gigas\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">giant squid<\/a>); or the ceviche de <em><a href=\"https:\/\/cookpad.com\/pe\/recetas\/10903008\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">conchas negras<\/a><\/em>, especially popular in northern Peru. In this emblematic dish of Lima, boiled <strong>potatoes are mashed into a smooth dough<\/strong> and seasoned with salt, lime juice and <em><a href=\"https:\/\/www.elbrujo.pe\/blog\/aji-amarillo-origen-propiedades-y-usos-en-la-gastronomia-peruana\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">aj\u00ed amarillo<\/a><\/em>. A compact layer is shaped as the base, the chosen filling is added, and then <strong>it is neatly sealed with another layer of potato on top.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A slice of hard-boiled egg and a generous \u201cdrizzle\u201d of mayonnaise \u2014 often accompanied by olives and avocado \u2014 usually crown this delight.<strong> It\u2019s a dish that beautifully brings together the flavours of Peru\u2019s extraordinarily rich sea<\/strong> \u2014 one of the most bountiful in the world thanks to its vast marine resources \u2014 with those of the <strong>Andean potato, domesticated more than 7,000 years ago<\/strong> in the highlands and widely regarded as<strong> Peru\u2019s greatest contribution to global cuisine.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Main courses<\/strong><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"770\" height=\"576\" src=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/02\/IMG_20230409_114831.webp\" alt=\"\" class=\"wp-image-3418\" srcset=\"https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/02\/IMG_20230409_114831.webp 770w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/02\/IMG_20230409_114831-300x224.webp 300w, https:\/\/freewalkingtourslima.org\/wp-content\/uploads\/2026\/02\/IMG_20230409_114831-768x575.webp 768w\" sizes=\"auto, (max-width: 770px) 100vw, 770px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">In Lima, committing the <strong>deadly sin of gluttony<\/strong> is almost inevitable \u2014 so don\u2019t feel guilty if, after your soup and starter,<strong> you\u2019re tempted to order a main course<\/strong> as well. In that case, <strong><em>arroz con mariscos<\/em>, <em>jalea mixta<\/em> or <em>chicharr\u00f3n de pescado<\/em><\/strong> are hard to resist. There are other options, of course, but these are the favourites \u2014<strong> the ones most loved by locals<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The first hardly needs much introduction. Picture a neat mound \u2014 or <a href=\"https:\/\/es.cravingsjournal.com\/arroz-con-mariscos\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">little hill \u2014 of fluffy rice<\/a>, sometimes creamy like a risotto (depending on the chef), generously mixed with assorted seafood, strips of red pepper, diced carrot, sweetcorn kernels and peas, <strong>all cooked in a fragrant base of garlic, onion, <em>aj\u00ed panca<\/em> and <em>aj\u00ed amarillo<\/em><\/strong>. Fish stock and white wine are added to deepen and <strong>enhance the flavour.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/peru.info\/es-pe\/gastronomia\/blogperu\/2\/12\/comida-peruana--conoce-la-historia-y-receta-de-la-deliciosa-jalea-mixta\"><em>Jalea mixta<\/em><\/a> and chicharr\u00f3n de pescado are quite similar. The key difference lies in the addition of <strong>assorted seafood and crispy fried yuyos \u2014 a type of Pacific seaweed<\/strong> \u2014 in the former, which is also served with tartar sauce. In both dishes, the crunchy pieces of fish (and seafood) are <strong>accompanied by <em>sarza criolla<\/em><\/strong> (a fresh onion relish), boiled cassava, chilli cream, toasted cancha and crispy chifles. These generous <strong>combinations bring together three or more dishes<\/strong>, so you can sample a bit of everything. The popular rondas typically include ceviche, arroz con mariscos (or seafood chaufa rice) and jalea mixta (or chicharr\u00f3n de pescado).<strong> Other tempting versions may add <em>tiradito<\/em>, <em>causa rellena<\/em> or <em>pulpo al olivo<\/em> to the feast<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And if you\u2019re wondering <strong>which drinks best accompany such a banquet<\/strong>, may I suggest a <a href=\"https:\/\/freewalkingtourslima.org\/es\/pisco-la-bebida-de-bandera-del-peru\/\">Pisco Sour<\/a>, a Chilcano, a well-chilled beer or a refreshing <em><a href=\"https:\/\/www.thegourmetjournal.com\/a-fondo\/leche-de-tigre-el-jugo-del-ceviche\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">leche de tigre<\/a><\/em>.
